Thank you very much to everyone who visited Sushi Lab. in 2025.
This year, approximately 500 guests took part in the sushi cooking class as a memorable experience in Kyoto.

What is important to Sushi Lab.
This year, we have not only been making sushi,
We have always placed importance on helping people understand Japanese food culture through an experience.
Why sushi?
This is because sushi is a dish that condenses Japanese home cooking, artisan culture, seasonality, tools, and respect for ingredients into a single dish.
Therefore, the Sushi Lab. experience doesn't end in the kitchen.
Walk around Nishiki Market, learn about seasonal fish, select fish at a fishmonger, and learn by watching the fish being butchered.
We will also teach about the use and meaning of knives, as well as how to make dashi and miso soup, a traditional method passed down in Japanese households.

After learning at the market, we returned to the kitchen and started making sushi.
Eating the sushi you have made yourself is a moment that naturally brings smiles to everyone's faces, regardless of nationality or age.
From "eating" to "knowing" and "making."
We believe that this experience will leave a lasting impression of Japanese food culture.
We also held a tuna cutting show event! Collaborate with Kimura Fish Store
We recently hosted a special tuna cutting show in collaboration with Kimura Fish Store, a long-established fish shop with over 70 years of history, located in Kyotoās famous Nishiki Market.
Every morning, the experts at Kimura Fish Store carefully select fish at the central wholesale market, using their trained eyes to choose only the highest-quality tuna with rich, perfect fat content.
Watching a whole tuna being freshly cut and enjoying it right on the spot is an unforgettable experience ā the taste is so fresh and rich that it feels like it melts in your mouth.
Guests can simply enjoy eating the freshly prepared tuna, or take it a step further by joining our hands-on sushi-making experience.
Whether you prefer to watch, taste, or create, this event offers a truly authentic and delicious taste of Japan.
We also offer lessons for groups and hotels!
We provide on-site sushi lessons for groups and hotels, tailored to different group sizes and occasions.
At Piece Hostel Sanjo, we hosted group lessons for 4 to 18 guests, traveling directly to the venue.
Using seasonal ingredients, participants enjoyed a fun maki-sushi party, while also learning a variety of cooking techniques such as searing fish, preparing fresh seafood, and even experiencing fish cutting demonstrations.
We have also received requests from large groups of 40 guests or more, where we organized interactive sushi lessons featuring activities like a sushi competition, making the experience lively, engaging, and perfect for team events or special gatherings.
We are happy to accommodate different group sizes and customize the lesson content.
