On Friday, July 11, 2025, a hotel anniversary event was held at "The Millennials" hotel in Kawaramachi, Kyoto.
A collaboration with "Kimura Fresh Fish Store," which has a 70-year history in Nishiki Market!

Preparing for the 19:30 cutting show and sushi making!
We served sea bream as freshly cut fish, as well as arranged sushi made with white soy sauce and ground sesame seeds mixed together, as shown in the photo.

These three types of sushi were served! Everyone was delighted with the sushi made from super fresh fish and came back several times to get more sushi.





Travelers from many countries told us that they enjoyed Sushi Lab.'s sushi, which made us very happy. While eating raw fish is common in Japan, it seems to be unusual abroad, and I think watching the fish cutting show was also a fresh experience for them.
Many guests are surprised by the deliciousness when they try sushi made with freshly cut fish. This is a highly recommended experience for those planning group tours or travel packages.
We look forward to opportunities to serve sushi at events like this again.
