Try Traditional Japanese Knife

In our sushi making experience, there is a process where we cut the fish obtained from Nishiki Market into slices for sushi.

For this, we use knives from a brand called "Taski" 🔪

I introduce about Taski's knife in this post.



Seki City, Gifu Prefecture, famous for its knife producers


These knives are made in Seki City, Gifu Prefecture. This city has been known as the mecca of Japanese swords for over 800 years, and its blades were once trusted by samurai throughout the country. In the workshop of this city, skilled craftsmen finish each knife with meticulous care. Elegant, lightweight, and with a sharp edge, they are perfect for modern kitchens.

Everything is easy to cut.


At Sushi Lab., we use these knives when cutting fish or ingredients for miso soup.

Whether it's delicate fresh fish that would lose its shape if cut too forcefully, or tough vegetables that are difficult to slice, these knives allow you to cut through easily with minimal effort.

Maintenance is also easy!


You probably don't sharpen knives at home very often. People tend to think it's troublesome to take out a sharpening stone.

Taski's sharpener is different in shape from the sharpening stones commonly seen in Japan.

It's divided into two parts: one that uses magnets to secure the knife, and another that rolls to sharpen,

making it easy for anyone to sharpen their knives, even if they don't know the proper angle or pressure to apply.
