May in Kyoto is the season of fresh greenery.
With many sunny days, tourists from various countries visited the city.
In this post, we'll introduce the experiences of those who came for our sushi-making workshops in May!
In May, Sushi Lab. welcomed various guests, from individuals to groups of 40 people, who came to learn sushi making.
We are still accepting reservations for June and July, so please make your Booking from the top page!
Small group Guests




We made three types of sushi using classic fish like tuna and salmon, as well as seasonal fish like yellowtail, horse mackerel, and sea bream that were at the end of their peak season.
May's dessert was strawberries. Japanese strawberries are known for their large size, uniform shape, and striking visual appeal. They are characterized by their high sugar content and strong sweetness, with soft, juicy flesh that provides a delightful texture. Additionally, their rich aroma is one of the charms of Japanese strawberries.
Big Group Guests
①We conducted a two-day group tour for 30 people at "DAIDOKORO," a large kitchen space located in front of Kyoto City Hall (15 minutes from Kyoto Station).

【Sushi Making Tour】
Types of Sushi : Rolled sushi, nigiri sushi, vegan sushi
Other experiences: Making sushi rice, making miso soup
Sake provided: 5 types of sake (including two varieties of the Dassai that is famous in Japan, Noguchi Naohiko Sake Institute, plus Kyoto local sake "Mikura" and "Ine Mankai")
Others: Gluten-free snacks, three types of pickles, beer, and soft drinks provided

【Tour Activities】
Sushi making competition
Participants were divided into 4 groups, with a sushi-making instructor at each table. A presentation winner was chosen from each table, and winners received Sushi Lab. T-shirts!
All participants received chopsticks decorated with sushi patterns as gifts.


②We conducted a group tour for 21 people at the eating space in "GOOD NATURE STATION," located just a short walk from Kyoto Kawaramachi Station.

【Tour Activities】
Making Dressing
We made Japanese-style dressing by mixing soy sauce, vinegar, and sugar. Participants enjoyed it on their salads.
Fish Cutting
Experience cutting salmon blocks into sushi-sized pieces. Though challenging, participants enjoyed the experience.

Not only can you learn how to make sushi, but you can also learn about Japanese food culture and experience other Japanese dishes like miso soup and dressing making. We will do our best to create the ideal tour according to our guests' wishes. We also introduce different ways to eat sushi by explaining the varieties of condiments that complement sushi, such as soy sauce, vinegar, and nori seaweed. Our goal is for guests to enjoy fresh fish while experiencing the history and tradition inherent in sushi as Japanese cuisine.
